Huevos Rancheros Breakfast Burritos

If I were to describe myself in a nutshell it would be that I am a creature of habit through and through. Whether it's coming home nearly every day to the same routine, shopping at the same grocery store every weekend or going to the same restaurants, I know what I like and I stick to it! Ain't nothing wrong with that, if you ask me!

In staying true to myself and my habits, there is a recipe that has been in the weekly morning routine for quite some time now that I just have to share. My huevos rancheros inspired breakfast burritos are a cinch to throw together during my Sunday meal prep routine. They're also delicious, hearty and healthy for a quick weekday breakfast solution. With a recipe like that, it is easy to see why I include it in my weekday breakfast lineup on the reg!

Freezer breakfast burrito and/or wrap things have been a staple in my breakfast routine for quite some time. The tried and true spinach feta wraps often make an appearance. As good as those and other variations are, it is these huevos rancheros breakfast burritos that really hit the spot. Starting with a pot of my tried and true Instant Pot or slow cooker pinto beans, I make these bad boys in bulk with scrambled eggs, salsa and/or hot sauce, lots of melty Monterey Jack cheese and a sprinkling of cilantro for freshness. The result is one savory, zesty breakfast bite that will fuel your morning and then some.

Freezer Spinach Feta Wraps

Shoot guys, life is busy. Like seriously busy. Do you remember growing up hearing every single "grown-up" go on and on and on about being so dang busy all the time? And your little kid self was like, "What does being busy mean? I want to be busy!" Well, lo and behold, now that I am a full-fledged adult, the wrath of being busy has, too, hit me. Between work, being a pug parent, having a social life and maintaining a side hustle, life is just a constant stream of being busy!

I must confess that when life is this busy, it's hard to be perfect and have (at least all) of your shit together. Even with the best intent of trying to meal plan and prep during the week, some things inevitably fall through the cracks and, before you know it, I'm paying $5 for a Starbucks spinach feta wrap. 

Even though I'm thankful to have such easy meal solutions at my fingertips, I'm not too keen on having to resort to buying meals out when I know if I just squeezed in a bit of prep time ahead I could have myself something equally delicious at a fraction of the cost. So on this edition of meal prep wonders, I take on The Man with my own version of Starbs' spinach feta wraps. And let me tell you guys, they're not only way cheaper and more convienent, but they are way more delicious, if I do say so myself!

Sausage, Kale and Potato Frittata

I can pretty much count on one hand the number of times I've skipped breakfast in my life. And the times I have skipped breakfast, let me tell you, it was not intentional. Like the time I started a new job and was completely out of my element, filling out paperwork and partaking in new employee trainings and tours. Fast forward to noon where my tummy made some embarrassingly loud noises and I realized the only thing I had consumed all day in my flurry of new experiences was drip coffee. Talk about a very out of character moment! 

You see, eating breakfast in the morning comes as natural to me as putting on clothes every day. Which is why I've never understood why people would intentionally skip breakfast or not like to eat breakfast aka the best meal of the day! From the moment I wake up, my mind goes to breakfast (ok, maybe coffee first, but breakfast followed closely after). And you best believe that I make a game plan for a hearty and tasty breakfast to get me all pepped up and ready to go. 

Since I'm just a big ol' planner, I love having breakfast prepared for me in advance so all I have to do in the mornings is grab something from the fridge and/or pop something in the microwave. From the Pinterest favorite egg muffin cups, smoothie packs and even mason jar parfaits, I've pretty much covered my bases with all things breakfast meal prep. But what I've really been feeling lately are frittatas!

Cole’s Chorizo Hash

The last few weekends I've realized that Cole and I have made time for what I lovingly like to call "planless weekends." You know, the weekends were you spend the majority of your time in pajamas, perpetually avoiding the shower, binge watching season after season of The Great British Baking Show and just generally taking a break from reality for two seconds. Because as summer starts to creep up and our social calendars start to fill up weekend after weekend until suddenly it's Christmas, its these lazy, low-key weekends that we crave, nay, need to unwind and recoup. 

But because I'm a Type A planner through and through, no "planless weekend" is complete without some sort of plan, usually in the way of what we're eating for breakfast, lunch and dinner each day. As Aziz Ansari's loving character said on season two of Master of None, "It's never too early to plan ahead, especially when it comes to matters of the tum." And because a laid back weekend cannot be made complete without a hearty and delicious breakfast/brunch, I like to make sure our weekends starts off on the right foot with an epic brekky. 

Breakfast is Cole's domain and, as of late, he's been whipping up some pretty amazing breakfast hashes on these lazy weekends. So amazing, in fact, I just had to trademark his name on this recipe that's become a household favorite. So for all of you that are about to partake in a relaxing, rather uneventful weekend, I present Cole's Chorizo Hash.

Migas Breakfast Tacos

It's been almost a year since Cole and I ventured to Austin! I miss the warm, sticky heat (if you've had a winter like we have in Washington, you'll understand), the undercurrent of smoky barbecue smell in the air, the fact that good beer and music were just steps away from our humble abode away from home and most importantly, the outstanding food. While Cole and I miss the barbecue like crazy, because there's no sign of any barbecue anywhere near as good as the barbecue we had in Austin up here, there's one thing we've talked about pretty consistently since we left that we just wish we had at our finger tips: Breakfast tacos. 

It's a little known fact, but Seattle is not keen on the breakfast taco. Breakfast burritos for sure, but there's basically no sign of breakfast taco life out there! This fact really upsets me, you guys. Because breakfast tacos are like a more approachable, more delicious version of a breakfast burrito. Grab one or two for a light and portable breakfast and enjoy to your heart's content with their infinite topping combinations. What could be better than that? 

In Austin, we got our breakfast taco fix on at many places, but the most memorable destination was hands down, Veracruz All Natural. Two of the five mornings we spent in Austin we walked just a few blocks down to a gravel parking lot with a white school bus as the breakfast taco making hub. Their signature breakfast taco was the migas breakfast taco – scrambled eggs with crushed up tortilla chips, served in a corn tortilla with an obscene amount of Monterey jack cheese, pico de gallo and fresh avocado slices. They were so good, we knew upon first bite that we had to make more than one visit while in Austin, and so good that we just had to try to recreate them at home to get our migas breakfast taco fix!

Lemon Ricotta Pancakes

I'm much more of a savory breakfast person – eggs benedict, biscuits and gravy and a good hash –  but when the mood strikes I am full on down for the pancakes. The best pancakes I've had recently, and perhaps ever, are from The Blackbird in Spokane. 

We visit Spokane a few times a year to see my favorite little brother and his girlfriend, Chelsie. Oh, and eat and drink some delicious things to our heart's content! And there's always a new restaurant and/or brewery that's popping up that they want us to try, whether it's a ceviche bar slash taproom, record shop slash dive bar or a Hawaiian fusion hole-in-the-wall. But the one place we make a stop for every time, no matter what, is at The Blackbird, and it's because of their showstopping brunch and sourdough ricotta pancakes.

These pancakes were an actual game changer for me when it comes to pancakes. Because I lean on the savory side of all things breakfast and brunch, it's very rare when I decide to opt for a pancake let alone fall madly in love with it. But these pancakes, creamy and rich yet light and pillow-like, turned me into a full on pancakes-for-brunch type of girl. 

So even though we can't make it to Blackbird every weekend (as much as we'd like to), we try our hardest to keep our pancake game strong at home. As an ode to the love of my life that is The Blackbird's sourdough ricotta pancakes, Cole and I whipped up these runner-up-as-the-love -my-life pancakes, Lemon Ricotta Pancakes, and they seriously rocked my world!
