Pumpkin Chocolate Chip Muffins

Hey strangers! Remember me?! It's been a HOT minute, I know. Let me just give you a slight recap of what has been going down in the world of Hungry Ali.

In case you missed the news, I recently got engaged! Which means I am already knee deep in planning a wedding which is amazing, fun and overwhelming all at once. On top of that, my day job has been keeping me busy with events every other weekend in addition to week days. On top of that all, I decided it would be a good idea to go to grad school which I am now doing two evenings a week with the addition of homework added back into my life which is supes fun. Oh, and still just trying to be a pug mom and breath a little! So yeah, life is pretty intense to say the least! 

So you can imagine why I have not had too many spare minutes to think about ze blog. Even though I fully expect to post less over the next year or so while life starts ramping up in big ways, I fully intend on keeping the blog alive in whatever capacity, even if that means posting once a month. So thank you in advance for your understanding, your patience and for being a fan through thick and thin! It truly means the world.

Salty Chocolate Rice Krispie Treats

I'm no Martha Stewart, but if there's one thing I know about entertaining it's that you know you've succeeded when your dishes disappear quickly. It doesn't matter if your house is a mess or if your beautiful presentation took a few hard hits on the way over to the potluck; if it's devoured within minutes and then subsequently made the hot topic of conversation at the party, you know you've hit it out of the park. 

Because I'm always eager to please, whenever I'm heading to a party or hosting my own, I resort to only my best, tastiest of dishes that I know will be a huge crowd pleaser. [Insert plug for my curry deviled eggs, smoked salmon spread and Dr. Pepper pulled pork]

But this post is not about those other recipes which, frankly, fair inferior to those recipes (no offense, other also very delicious recipes). This recipe is about the decadent, salty, sweet chocolate rice krispie treats that you're going to fall head over heels in love for. 

To put it in perspective of just how delicious and popular these babies are, I took these to barbecue recently. Within the hour of me showing up with a huge platter of them, I not only heard from no less than three people how delicious they were but saw with my own eyes the disappearance of them. Guys, they were eaten before the entrees were even served. So, THAT good.

Marshmallow Brownies

We all know I'm not one for baking, but sometimes the occasion just calls for it! Be it for the Super Bowl, Valentine's Day or just because you feel like baking and eating something sweet, sometimes a girl's just gotta bake. 

Whenever I do feel like baking I don't try to get too fancy and I go back to the classics I grew up with. Like banana bread or these mini cheesecakes! So the last time I felt like baking I wanted to whip up another classic: one of my favorite sweet treats, Marshmallow Brownies. 

It's funny, I've eaten these dozens of times throughout my whole life and it never once occured to me that they're not technically brownies. Sure, they're chewy and fudgy and decadent as ever, but they actually resemble a blondie more than a brownie. It only took 27 years and making these for my too-smart-for-his-own-good boyfriend, Cole only for him to point this pretty obvious fact out to me to realize it. Go figure!

Neverthless, whether they're brownies or blondies, who really cares? This recipe combines the best of both worlds, and then some. The batter actually starts with melted butterscotch chips and butter (uh, yeah) which creates for a sticky, rich base. And because this is dessert and you should only just go all out, you then add a healthy dose of chocolate chips, marshmallows (obviously) and walnuts for crunch. When they come out of the oven they're golden brown and smell like heaven. So you can only imagine just how glorious they taste!
