Instant Pot Red Beans and Rice

So last Christmas I got what everyone and their mother also got for Christmas: an Instant Pot. And you know what? I'm kind of obsessed with it! 

Have you been living under a rock and have no idea what an Instant Pot is? Not to worry, friends, I got you. An Instant Pot is a 9-in-1 electric pressure cooker that can also be used as a slow cooker, rice maker, yogurt maker and so, so much more. It's basically a smarter, safer and faster version of the slow cooker that is all the rage, for good reason. The pressure cooking method alone is a dream, making it possible to cook laborious foods like dried beans, stews and slow-cooked meats two to six times faster than any other method. And I don't know about you, but I'm all about saving time in the kitchen! 

While I'm still an Instant Pot noob, I'm starting to test the waters with various recipes that can be made better and easier with the help of the Instant Pot and learning to love it more and more with each cook. In fact, one of the first things I created was what turned me into an Instant Pot fanatic and that, my friends, was red beans and rice.

Sausage, Kale and Potato Frittata

I can pretty much count on one hand the number of times I've skipped breakfast in my life. And the times I have skipped breakfast, let me tell you, it was not intentional. Like the time I started a new job and was completely out of my element, filling out paperwork and partaking in new employee trainings and tours. Fast forward to noon where my tummy made some embarrassingly loud noises and I realized the only thing I had consumed all day in my flurry of new experiences was drip coffee. Talk about a very out of character moment! 

You see, eating breakfast in the morning comes as natural to me as putting on clothes every day. Which is why I've never understood why people would intentionally skip breakfast or not like to eat breakfast aka the best meal of the day! From the moment I wake up, my mind goes to breakfast (ok, maybe coffee first, but breakfast followed closely after). And you best believe that I make a game plan for a hearty and tasty breakfast to get me all pepped up and ready to go. 

Since I'm just a big ol' planner, I love having breakfast prepared for me in advance so all I have to do in the mornings is grab something from the fridge and/or pop something in the microwave. From the Pinterest favorite egg muffin cups, smoothie packs and even mason jar parfaits, I've pretty much covered my bases with all things breakfast meal prep. But what I've really been feeling lately are frittatas!

Bacon Honey Mustard Potato Salad

I'm gonna level with you all real quick: when the sun comes out, I turn into a real lazy cook. Gone are the days when I actually want to slave away over the stove making soups or roasting vegetables. Because I'm not trying to sweat anymore than I have to, ja feel? 

So when the sun comes out to play in Seattle, it's all about turning the oven off and turning the grill on! And in case you've been living under a rock, I sort of kind of like to grill things

But what I love almost more than delicious grilled meats and veggies on the grill in the sunny weather are cold summer salads. The kind you make a big batch of early in the week, stick it in your fridge to let the flavors marry and become even more delicious over time. The kind that make dinner time a real lazy effort because you're merely throwing something on the grill and eating a cool summer salad straight from the bowl. We're talking minimal effort here, friends!

Mama D’s 5-Ingredient Salsa

In my family, we are huge chips and salsa eaters. In fact, almost every day I can remember growing up (and still to this day when I come home to visit) my dad gets home from a long day of work or from working out in the yard and immediately pours himself a bowl of Pace Picante salsa and a big handful of tortilla chips. It's like clockwork! 

My dad is clearly a smart man though because chips and salsa are quite possibly one of the most perfect snacks ever. Crunchy, salty chips and spicy, zesty salsa? It's like the poster child of snacks.

The whole Davidson family agrees, though we don't always agree with his choice in Pace Picante – hey, he's a man who knows what he likes! Which is why my mom started to make her own homemade salsa.

Spicy Pineapple Zucchini Bread

Sundays are for baking. There's nothing better than spending a lazy Sunday by leisurely baking, filling your kitchen with warm, sweet smells and getting to enjoy the finished product fresh from your own oven. That's the dream right there! 

And to me there's nothing better than baking fresh bread – banana or zucchini are my favs. And what do you know? The last time I went on a Sunday baking spree, I just so happened to have had zucchini on hand to inspire this tried and true classic: spicy pineapple zucchini bread. 

Sidenote: in the 3+ years we have been dating, I had no idea how much Cole is obsessed with zucchini bread. As soon as I uttered the words, "I think I'll make zucchini bread," this eyes lit up. So you can only imagine how he felt when he got to enjoy it. Let's just say that this recipe made two loafs and they were both gone in a matter of days. There are two of us. TWO. 

This recipe is straight from Mama D's kitchen, and was something I grew up on. Her twist on classic zucchini bread can't be beat with the addition of crushed pineapple for an unexpected texture, moisture and sweetness, warm spices, and, of course, blueberries. Because blueberries in baked goods > baked goods without blueberries. True story.

Rosemary Ginger Fizz

Every New Years Eve party needs a stunning, bubbly cocktail! I'm still quite the newbie when it comes to crafting cocktails but this year I wanted to give it a whirl. I have to say, I was pretty pleased with my mixology skills! 

Cole inherited a half gallon of whiskey for Christmas and while we're not huge whiskey drinkers, we are equal opportunity alcohol drinkers. So I was determined to create something both festive and (hopefully) delicious using this lovely gift that graced our household. 

Turns out, when you add ginger ale, lemon and rosemary to whisky, it turns into something magical. Seriously. Nice and tart, not too sweet and perfectly effervescent, these whimsical cocktails will be a hit at your New Years Eve party this year.

My Favorite Recipes 2015

I'm having a hard time believing that 2016 will be here in a matter of hours! Time sure flies. 

2015 has been a great year. Many great memories were made, and many great foods were eaten. I would consider that a good year, my people. But seriously, one of my proudest moments this year has been starting this here blog and having the opportunity to share my love and passion for food with you fine people. Lemon Garlic Kale

I feel like kale has had its moment, and then some. Kale this, kale that. We get it already, kale! 

And just when I thought I was over it – granted, I love kale in my favorite soup, Zuppa Toscana – I had some wacky idea last week to not only buy a bunch of beautiful looking dinosaur kale at the store, but try a new recipe that has become my new favorite veggie side dish to date. 

I'm not kidding, you guys. I'm kind of obsessing here. Who knew kale could be so good??

Black Bean Corn Salsa

Chips and salsa are one of those classic combinations. Like peanut butter and jelly, cookies and milk, grilled cheese and tomato soup, Netflix and chill – you get the picture. Tangy, vibrant salsa paired with salty, crunchy dip vehicles. It’s a match made in heaven.

It’s also one of my favorite game-day snacking methods. Because the only thing better than eating delicious food on a football Sunday is having something to stuff your face with as you try not to bite your fingers off during a classic Seahawks nail-biter!

Chipotle Bourbon BBQ Turkey Burgers

Burgers are pretty great, you guys. Can we all agree on this? A juicy patty sandwiched between two soft, toasted buns with your choice of toppings. Whether you go the classic route or jazzed up, burgers are just always good.

And while I wish I could feast on a Dick’s cheeseburger any night of the week (because I probably would if I could) there needs to be some balance here, my people. This is why I like to have ground lean turkey on hand to make, you guessed it, turkey burgers. I can have my cake AND eat it too!

Before you think I’m committing sacrilege by making something perfectly delicious, like a burger, boring, healthy and flavorless, you better think again. When I make weeknight turkey burgers, I mean business. I’m just a girl trying to get my burger on! (more…)
