Cheesy Potatoes #1

Like most families, my family doesn't always agree on things. Sure, my bro and I get into the wildly hilarious political debates during family holidays, but other than that, our differences are strictly food based.

I was the weirdo kid who grew up not liking olives (still don't) and forced my family members to trade meals with me at restaurants if I sensed a trace of olives (there never was a trace of olives. I was/am just crazy). Kyle was the complete weirdo who didn't like Thai food (still doesn't), my mom has a strong dislike for sausage in case you haven't heard, and my dad, well, my dad doesn't not like a lot of foods per say, but he's the family member most likely to go on a strange health kick!

But the real debate of food with the Davidson clan was with the favorite potato recipe. My brother is a fan of mashed potatoes and my mom's infamous Company Potatoes (more on these at a later date), my mom loves herself a classic loaded baked potato and my dad will eat just about all varieties of potatoes because he's a very smart man, like I've said before with his love for salsa.

Me on the other hand? I've always had a soft spot for these simple yet classic Cheesy Potatoes #1. Why are they #1? They are the OG of the Davidson family potato recipes. Before Company Potatoes even came to existence, these were the potato recipe. But once Company Potatoes came along, they not only became my brother's favorite but the favorite of all extended family members and friends. So, sadly, my vote for the family get together potato recipe choice was vetoed.

But now that I'm an independent woman, I can make any kind of potatoes I damn well please!

So back to these heavenly potatoes. They're creamy and cheesy, no doubt – with tangy sour cream and gobs of sharp freshly grated cheddar cheese. But the best part of these potatoes definitely has to be the crunchy, buttery topping which is literally just crushed corn flakes and butter mixed together. These potatoes are kind of like a cheesy potato "crisp", if you will. And if you love fruit crisps, or anything that involves a buttery, crunchy topping like I do, then these potatoes are about to be your new fav.

Oh, and they're a cinch to throw together! So once you make these you'll have to decide…where does your potato recipe allegiance lie?
